Summer Time Pizza Recipe
What you need: 4 Chicken sausage, 1.25 cups Marina Sauce, 2 cups mozzarella cheese, 6 fresh roman tomatoes, 6 fresh mini peppers, pizza crust( Select one according to dietary preference). 1/4 cup of water.
We will also need some seasoning for the sauce. You could also add some fresh basil and parsley.
Step 1 – Cook your sausage. I had some leftover frozen onions & peppers so I just threw them in. Cook until done, remove from pan and slice into thin slices to top pizza. Don’t wash that pan! We need it next! 🙂

Step 2: Chop up 6 roman tomatoes. Chop 3 finely and chop 3 in bigger chunks – keep separate. Slice 6 mini peppers in thin slices. Turn heat on stove to medium. In the same pot you just cooked the chicken sausage in, pour water, marinara sauce, finely chopped tomatoes, and half the mini peppers.
Step 3: Add seasoning to your liking. Usually I put 1/4 teaspoon of salt, pepper, and Italian seasoning. My husband usually likes it when I add a tablespoon of brown sugar to cut up the acidic taste of the tomato sauce. Let sauce cook down for about 10-12 min. Should thicken a little.
Step 4: Pre-heat oven according to your pizza crust directions. Roll out dough in pan.
Step 5: Spread sauce and add sausage first, then mozzarella, then the rest of the mini peppers, and tomatoes chunks. The right side of this pizza is for my picky toddler:) Now bake until brown at the edges and gooey on top!
Step 6: Eat your OH so healthy pizza! This is great for the summer time when there are so many fresh veggies! Next time I’m going to add some baby spinach and purple onion!
